Thompson Bros. describe the result as bright, fresh and zippy, with a refined and surprisingly gentle peat profile, classic savoury island character and a long, coating, waxy finish.
Aged 21 years and presented at natural cask strength of 52.7% ABV, natural colour and no chill filtration.
Gentle oak structure leads the way into classic savoury island character - think smoked kippers and rough hessian sacks alongside juicy roasted pineapple and tart green apple. Layers of toasted oak build across the mid-palate, rounded out by a lovely, warming touch of stem ginger steeped in sweet syrup.
